Hausbar in Vienna approaches modern fine dining with a strict seasonal framework. Executive chef Oliver Mohl directs the kitchen using ingredients sourced directly from local growers. He replaced standard wine service with a custom cocktail program years ago. The team adjusts the tasting sequence multiple times each year to keep contemporary cooking aligned with harvest windows.

Custom pairings and seasonal plates

Barwoman Kathi crafts every beverage specifically for the corresponding dish, offering both alcoholic and alcohol-free versions that mirror each plate’s texture. The kitchen delivers quiet precision through roasted yellow turnip soup, a crisp kale ring, and a potato served with melted camembert and runny egg yolk. These components lead directly into a pear, chocolate, and lavender finish designed for guests staying through the entire eight-course sequence.

An intimate dining room

The venue operates Wednesday through Saturday and reserves one seat per guest for the entire evening. Christiane Niederbacher guides the floor with a calm rhythm that matches the kitchen’s pace. Critics have noted this deliberate pacing, awarding the spot three Gault&Millau caps and placing it among Vienna’s top twelve establishments. Visitors arrive expecting a structured meal that prioritizes concentration over rapid turnover.

For those who do not always want wine pairing, a detour to the Hausbar is a must, as the menu here is accompanied by cocktails. Whether with or without alcohol, the drinks are excellently balanced and perfectly matched to the dishes. The menu consists of eight courses, which unfortunately cannot all keep up with the quality of the drinks. The yellow beet soup with amaranth turns out unremarkable, just like a ring made of kale with mushrooms. However, the potato with camembert and egg yolk, along with the magnificent dessert of pears, chocolate, and lavender, truly excel. All in all, a visit to the Hausbar mainly impresses with taste surprises.
