The story

Kutsch Vienna: Cook the Market Austrian Cuisine

Kutsch brings its "cook the market" philosophy to life on Schopenhauerstraße in Vienna, where chef Max Maierhofer turns fresh produce from the adjacent Kutschkermarkt into gutbürgerliche Austrian cooking with an international twist. The kitchen draws on Maierhofer's experience across San Francisco, Ibiza, and Faro to shape menus that respect local roots while experimenting with global flavors, earning a 12-point rating from Gault&Millau.

The kitchen at the market

Max Maierhofer leads the service alongside sous-chef Michael Kowarz, translating his time abroad into precise execution of regional ingredients. The menu shifts with the seasons and the availability of goods from the market, ensuring every plate reflects current harvests. Maitre Constantin Binder manages the floor, maintaining a rhythm that matches the kitchen's focus on quality and consistency.

Regional plates reimagined

Dishes highlight the interplay between familiar textures and unusual accents. Reinanke presents with molten whey, finger lime, and fennel to cut through the richness of the fish. Calf's tongue rests atop a bed of Eierschwammerln, medlar, and spinach. Roasted suckling pig serves alongside saubohnen, pak choi, and yarrow. Desserts feature cherries paired with chocolate, pistachio, and mint for a finish that balances fruit and spice.

Wine and gathering

Sommelière Helena Jordan curates selections that bridge the gap between traditional Austrian vineyards and broader styles. Past events have explored Gemischter Satz compositions and the distinct profiles of grapes grown in varying climates. The venue accommodates different group sizes, including a private dining room for larger parties. Guests can also join the weekly Sunday roast, which invites diners to share a table with board games like Monopoly and Werewolf.

Cook the market" is the motto at Kutsch am Kutschkermarkt. Using regional ingredients, Max Maierhofer – drawing on his experience from San Francisco, Ibiza, and Faro – creates traditional hearty dishes with a twist, which he complements with carefully selected fine wines. This results in creations such as turbot with whey, finger lime, and fennel; veal tongue with porcini mushrooms, medlar, and spinach; suckling pig with broad beans, pak choi, and hyssop (bee balm); or a cherry dessert with chocolate, pistachio, and mint.
