The story
Léontine in Vienna offers a grounded approach to modern French cooking that strips away intimidation while preserving technique. Nicolas Scandella established this dining room after completing his training at Michelin-starred kitchens across Paris and Switzerland. The kitchen pairs locally sourced Austrian produce with carefully selected ingredients imported directly from France. This deliberate combination allows the contemporary French kitchen to execute classic methods without unnecessary ornamentation.
The current menu highlights river crayfish tossed in a rich saffron foam to open the meal. Subsequent courses feature a pulled pork spring roll served alongside sharp red cabbage slaw. Grilled zander arrives with charred vegetables and a bright white wine reduction. Guests frequently return for the final course, a crisp sablé layered with nougat and ripe pear. The wine list focuses heavily on small French producers that complement these earthy and refined flavors.
Ninon Roux manages the front of house with a philosophy rooted in everyday comfort. She designed the space to function as a gathering point where strangers become familiar faces over shared meals. Wooden fixtures and warm lighting reinforce the deliberately casual environment.
