The kitchen and its philosophy

Founders Matthias Pitra and Steve Breitzke established MAST Weinbistro in Vienna around a single premise that genuine drinking requires equally honest eating. They bypassed conventional retail lists to visit vineyards directly, ensuring every bottle complements their wine bistro cuisine. Head chef Lukas Lacina applies that same unvarnished logic to the kitchen, sourcing vegetables from their own plot and meat from regional farmers. This approach earned a sixteen point Gault&Millau rating, confirming that restrained cooking resonates with critics who value provenance.

Standout plates and seasonal produce

The six-course Chef’s Choice menu reveals how these suppliers translate onto the plate. Early courses often feature smoked carp alongside roasted pork belly, both finished with sharp accents like nettle or salt mandarin. Warm preparations follow without pretense, highlighting braised artichokes, house gnocchi, or pikeperch cooked with fennel and saffron. As the name suggests, everything here revolves around the pleasure of drinking. The wine list leaves nothing to be desired – unconventional, experimental, diverse. Even Georgia is represented, alongside numerous organic and natural wines from Austria. Where such distinctive glassware is used, the food certainly isn't mundane either. The best way to experience it is through the six-course "Chef’s Choice" menu with a matching wine pairing. For starters, there are small bites – such as smoked carp, pork belly, chickpea, or sheep stew, finely accented with nettle or salt mandarin. The pork: particularly outstanding. These are followed by hot dishes like artichoke, gnocchi, or pikeperch with fennel and saffron, as well as beef onglet with betony, broccoli, and black garlic. Aromatic, thoughtful, harmonious.
