Few Viennese establishments are as passionately dedicated to the schnitzel as Meissl & Schadn on Schubertring. In the open kitchen, the meat is pounded right in front of the guests' eyes, passed through the breading station, and then fried in either vegetable oil, lard, or clarified butter. We traditionally choose the latter. It arrives at the table as a perfectly puffed schnitzel, light as a pillow, with an almost paper-thin crust. It is served with potato salad and the nearly forgotten Viennese garnish of capers, anchovies, eggs, and parsley. The wait for the Salzburg Nockerln is also part of the charm, as this dessert ultimately sees us off into the evening feeling wonderfully satisfied.
