Guests encounter playful reversals like sour Beuschelsalat prepared as a ceviche or lamb shoulder grilled alongside black walnut hoisin sauce. The kitchen’s Austrian fusion style continues with sepia tartare seasoned by Szechuan pepper and fingerlime, followed by langoustine thermidor finished with parmesan hollandaise and truffle. Much of what Markus and Lukas Mraz send out from their kitchen as culinary jewels borders closely on magic. And this is not meant negatively; the "Menu chez Mraz" is truly magical: a dozen courses that rarely lack wit and never lack flavor, where classic pairings are placed in new contexts (sour tripe salad à la Ceviche!) and unheard-of experiments turn into instant classics (grilled lamb rack with black walnut hoisin!). The Mraz brothers stand firmly rooted in the Brigittenau and embark on a sensory journey: ingredients are presented in a neighborhood style using a shopping trolley, plated on avant-garde ceramics, and cooked without boundaries – representative of three highlights among many: cuttlefish tartare with Sichuan pepper and finger lime, lobster Thermidor with parmesan hollandaise and truffle, and krapfen with fig coffee semifreddo and sumac sugar.
