Excellent dining has always been a staple at one of the city's most renowned hotels. Since Nikolaus Platteter, previously head chef at the Beef Club of the Tiroler Schlosshotel Fiss, assumed culinary direction at Restaurant Opus, it has taken another major step forward in quality. Platteter impresses with a clear, unadorned approach and sends out harmonious dishes from the kitchen. The grass-green, subtly sweet-and-spicy jalapeño espuma paired with diced tuna and tomatoes exemplifies a flawlessly executed amuse-bouche. The sauces are particularly refined, ranging from the wonderful chicken vinaigrette served with Label Rouge salmon to the Mignonette sauce, which provides the succulent lobster with flavor structure and balance. The desserts impress through their lightness (croquant cannelloni with elderflower and goat milk) and aromatic sophistication (white chocolate with coconut).
