Eva and Ewald Plachutta founded the kitchen decades ago, handing the operational reins to their son Mario, who opened his first location in 1993. The current team preserves that original framework while adjusting service pacing to match modern expectations, ensuring every plate reflects a clear standard of quality.

The most recognizable offering is the Tafelspitz, simmered for hours and presented in a copper pot alongside root vegetables, marrow bone, chive sauce, and apple horseradish. Roasted chanterelles appear in two distinct preparations, one paired with egg and parsley potatoes and another resting in a light herb cream beside napkin dumplings. Guests seeking something cooler can order the house-pickled salmon trout tartare, which cuts through the richness with bright acidity. Located in a historic, lovingly renovated building with a courtyard garden is the Plachutta Nussdorf. Alongside the renowned classics made from domestic beef, the kitchen also offers a lovely selection of seasonal dishes, such as roasted porcini mushrooms served with egg and parsley potatoes or available as a vegan option, as well as porcini mushrooms in herb cream sauce with bread dumplings.
