The story
Plachutta Stammhaus Hietzing anchors a legacy of Viennese cuisine in Vienna near Schönbrunn Palace. Eva Plachutta assumed management of this flagship location in 1987, guiding it to the status of an institution while her husband Ewald, author of over 1.4 million cookbooks, established himself as a doyen of Austrian gastronomy. The kitchen honors traditional techniques, from slow-simmering boiled beef to precise breading, standards maintained by Mario, followed by current leaders Julia and Christoph Plachutta.
The kitchen prepares its world-famous Tafelspitz using beef from Austrian pasture-raised oxen, simmered with darkened onion skins and black peppercorns before arriving at the table in a copper pot. Diners select specific cuts such as the Tafelstück and the Kaiser piece, each accompanied by roasted potatoes and chive sauce, with apple horseradish. This presentation reflects the dish's imperial history, which Gault&Millau notes brought the boiled beef to popularity through the Emperor's patronage.
Guests dine within easy reach of the imperial palace, where the menu extends beyond boiled beef to include the original Wiener Schnitzel cut from veal fricandeau, breaded in flour and eggs, then coated with breadcrumbs until crisp. The restaurant attracts visitors from around the globe, evidenced by a wall of fame featuring figures like Diego Maradona and Jeff Goldblum who have shared the table. Sweet endings often feature Kaiserschmarrn or chocolate-nut cake baked in a shirt, completing a meal rooted in authentic Viennese cooking.
