The family kitchen

Plachutta Wollzeile sits in the heart of Vienna, serving a refined version of traditional Viennese cuisine since 1993. Mario Plachutta launched the location, building directly on techniques his father Ewald developed over decades. Ewald later became one of Austria’s most published culinary authors, moving 1.4 million cookbooks worldwide. Today his children Julia and Christoph guide the kitchen, keeping the focus strictly on pasture-raised ox and measured seasoning.

Boiled cuts and breaded veal

The menu highlights precisely named preparations drawn from free-range cattle. Guests choose from the lightly marbled Schulterscherzel, the tender Kavalierspitz, or the famously lean Mageres Meisel. Each selection arrives in a polished copper vessel alongside simmering broth, roasted root vegetables, and a small bowl of apple horseradish. The Wiener schnitzel follows equally strict rules, using pounded veal fricandeau coated in flour, egg, and fine breadcrumbs before frying in clarified butter.
