The story
Wirtschaft. am Markt in Vienna delivers polished Austrian cooking inside a space born from two vacant market stalls. Visionary Hans Jörg Ulreich spotted the site’s potential and commissioned architect Markus Niederreiter to reshape the footprint into a contemporary dining room. Large glass facades and folding doors dissolve the boundary between interior seating and the bustling Meidlinger Markt during warmer months. The structure arrived in 2019 after Gassner & Partner executed the build, turning a neglected corner into a consistent anchor for Viennese dining.
The kitchen's approach to regional cuisine relies heavily on ingredients sourced directly from the group’s own BIO operation, wirtschaft. am land, which raises wild game and lamb in free-range conditions across the Oststeiermark. This supply chain anchors a menu that shifts with the seasons, currently highlighting earthy autumn flavors alongside summer freshness. Diners frequently encounter dishes like slow-braised May boar from their own breeding programs, Innviertler Grammelknödel served on lukewarm cabbage, or smoked goat cheese paired with a sharp marinated salad. A set apple cake finished with vanilla cream closes out the meal.
Sustainability extends beyond the plate, as photovoltaic arrays mounted on the building generate the majority of electricity required for daily service. Greenery carpets the roof terrace, softening the urban environment while filtering air above the dining floor.
