The Kitchen and Its Founders

The Erlhof in Zell am See grounds its Austrian cooking in a building that dates back to the eleventh century. Josef Brüggler brought his experience from previous Michelin recognized ventures when he took over the property in 2002 alongside his wife Renate. His daughter Sonja Brüggler now serves as the primary cook in the kitchen after earning Chef of the Year honors in 2013. The culinary approach favors precision over trends, a method that has earned the kitchen fifteen points from Gault&Millau and strong reviews from Falstaff.

Signature Dishes and Seasonal Focus

Guests often start with the terrine of fine fish and lobster served alongside a crisp cocktail sauce. The main courses rotate between regional game and lake catches typical of Alpine cuisine, such as the steinbutt paired with pea risotto or the venison schnitzerl finished with a rich mushroom sauce. A seasonal tasting menu might feature homemade quark ravioli followed by lobster prepared with spinach and hollandaise. This traditional kitchen relies on straightforward techniques and high quality ingredients rather than complex plating.

The Setting and Terrace

Dining takes place beneath exposed wooden beams or out on the sun terrace that overlooks the surrounding Alps. The restaurant maintains a direct hiking trail connection while offering guests access to a private bathing beach on Lake Zell. Service remains deliberately unhurried and familiar, allowing diners to focus on the food and the quiet mountain atmosphere. The Brüggler family is preparing for a smooth transition later this year, ensuring the same grounded standards continue under new management.

Rich in history. The Trapp family lived here before they fled to the United States, singing. The house was built around the year 1050, when even the Hohensalzburg Fortress did not yet exist. The location overlooking Lake Zell is breathtaking. And Josef Brüggler will soon be celebrating his quarter-century anniversary as proprietor of the Erlhof. This also explains why his cooking style is not trendy and why true class shines through in meticulous preparation. Light and airy is the smoked salmon parfait with delicate cucumber salad, rich in flavor the lobster soup, juicy the rosemary chicken with white wine risotto, first-rate the rack of lamb with ratatouille, fluffy the quark pancakes, sweet and sour with strawberries and rhubarb.
