Even the appetizer featuring mushrooms, beets, and goat cheese boasts a perfect balance of acidity and harmonious ingredient pairing. The salmon trout carpaccio is wonderfully enhanced by pumpkin seed aioli, yet the fish's natural flavor remains fully intact.
