This is a restaurant that lets ingredients speak for themselves, working with seasonal produce and homemade products that deliver overwhelming flavour. The approach has earned Controverse a Michelin Recommended accolade, a fitting nod to a kitchen that balances precision with genuine warmth.

The menu changes with the seasons, offering a choice of three or four courses. A recent lineup opened with baby lobster alongside tomato and a clear nage, followed by sardine with courgette and Noilly Prat. Main courses might feature pike-perch with potato millefeuille and escargot, or duck with clamart and rösti. Desserts, such as strawberry with tarragon and goat’s yoghurt, continue the theme of clean, confident cooking. Wine pairings are available for each menu, selected to complement the kitchen’s work.

Lunch is served in weekly rotations, with set menus around €34 — a practical way to experience the kitchen’s style. Recent lunch offerings included tataki of beef with Japanese noodle salad, and North Sea fish with salty vegetables and purée.
