The story
In the heart of Moorsel, a former brewery named De Valck has been reborn as Hostellerie De Biek. Since 2009, the restaurant and hotel have occupied the historic building, where original oak beams now frame a calm, airy dining room. Modern furniture sits comfortably against the old structure, creating an atmosphere that feels both grounded and refined.
The kitchen here is rooted in the local landscape. The chef works with fresh ingredients from the region, letting the seasons dictate the menu. Vegetables are crisp, fish is succulent, and game comes straight from the fields. This is country cooking with a creative twist – a style that has earned the restaurant a spot on the Michelin Recommended list for 2026. The menu changes regularly, but recent offerings include a lunch menu with amuses from the chef, a tuna mi-cuit with asparagus and wasabi cream, and fried eel with fries and tartar sauce. Each plate tells the story of local flavours, prepared with respect and a light hand.
Hostellerie De Biek is also a hotel with seventeen guest rooms in the outbuildings, each furnished with box-spring beds, a desk, and thoughtful touches of the building’s original character. Breakfast is served each morning, and the restaurant offers a lounge, outdoor seating, and private rooms for gatherings.
