The story

Plong Aalst: Modern Classics and Bright Vibes at a Le Fooding-Listed Bistro

A local breaker for modern bistro cooking

In the local dialect, a plong acts as a circuit breaker, a fitting concept for Toon De Backer's vision to spark a fresh energy in Aalst. The former business coach transformed a property linked to a historic hosiery factory into a low-threshold dining room that values substance over stylistic gimmicks. He describes the kitchen as one that prefers to cook properly rather than chase trends, building a menu around modern classics and strong ingredients. This grounded approach earned a selection by Le Fooding as a Table of Now, recognizing a spot that balances quality with genuine hospitality.

Brasserie classics with a twist

The menu revisits familiar favorites with careful attention to texture and balance. Starters like lemon sole goujons arrive accompanied by a jar of homemade tartar sauce, while pulled pork croquettes offer a smoky contrast alongside crunchy crudités and cocktail sauce. For vegetable-forward diners, the vegetarian tikka masala layers sweet potato and chickpeas with dates within a warming curry yogurt infused with cinnamon. Dessert remains simple and effective, anchored by an old-school vanilla crème brûlée with a crisp golden shell.

Design details and garden seating

Interior designer Kelly Claessens shaped the space into a vivid backdrop reminiscent of a Wes Anderson set, complete with lemon-yellow awnings and Muller Van Severen vases. Multicolored Bruno Rey chairs surround tables dressed with fresh cut flowers, creating a cheerful domestic atmosphere. Guests can extend their meal onto a sun-drenched terrace positioned right beside the city park, making the most of Aalst's green surroundings during warmer months.

When the house which used to belong to the head of the Du Parc hosiery factory suddenly became up for grabs, Toon De Backer (a former business coach) spotted an opportunity to usher the town of Aalst into a new era. The result? A café-restaurant that looks straight out of a Wes Anderson set, thanks to interior designer Kelly Claessens – think lemon-yellow awnings, Muller Van Severen vases, multicolored Bruno Rey chairs and fresh cut flowers on the tables. What better backdrop for the classic brasserie fare, thoughtfully revisited with just the right amount of kitsch: lemon sole goujons and homemade tartar sauce, pulled pork croquettes with smoky BBQ sauce and crunchy crudités with cocktail sauce (yes, really!) to get things going; then a vegetarian tikka masala packed with sweet potato, chickpeas, dates, carrot, spring onions and warming cinnamon, subtly dazzling despite a slightly bold curry yogurt; before an old-school vanilla crème brûlée, with a perfectly golden crackling topping! · Lina Megalinia
