The story
At De la terre à l'assiette in Arlon, Magali and Guillaume Lempens have built a restaurant around a simple conviction: bistronomie is an art of living. Their cooking draws directly from the soil – a modern French cuisine that lets local produce speak with clarity and emotion.
The dining room is warm and unpretentious, intentionally designed for the kind of meal where you take your time. "La bistronomie, c'est l'art de sublimer les produits locaux," the restaurant states, and the menu bears that out: each plate is built around what the season and the region offer, treated with finesse rather than unnecessary complication. This approach earned the restaurant a spot in the Michelin guide, which recognises it as a Recommended address – a mark of consistency and skill.
Dishes change regularly, posted each week on the restaurant’s Facebook page, but a recent lunch menu (35 €) gives a sense of the kitchen's style. Entrées include a tataki of beef with smoked eel and cebette, or a crudo of hamachi with buttermilk, beetroot and grenade. Main courses range from veal entrecôte with morels and salsifis to a Sando of sweetbreads and prawns with XO sauce, all prepared with care. Desserts follow the same line: a moelleux with 66 % Caribbean chocolate and buckwheat ice cream, or a crisp feuilleté with hazelnut and lemon.
This is a restaurant that understands bistronomie as "un mélange de saveurs & de passion" – a mix of flavours and passion served in a convivial setting. It is the work of two people who clearly believe that eating well, locally and sincerely, remains one of life's true pleasures.
