Amélie and Benjamin built L’Inattendu around a mutual dedication to the arts of the table, despite starting from very different backgrounds. Amélie transitioned from social work into hospitality after discovering a natural talent for guest relations during her early shifts. Benjamin followed a more technical route, graduating from the IPES d’Ath in 2010 and later earning titles like Meilleur Jeune Chef Rôtisseur de Belgique. Their respective journeys through establishments such as L’Impératif and Château du Mylord provided the steady foundation for this joint venture.
The kitchen operates on a disciplined framework that balances seasonal inspiration with precise execution, defining what modern fine dining requires. Benjamin’s training in rotisserie and international techniques shapes a menu that rotates between an Inspiration set, a dedicated We’re Smart tasting, and daily à la carte selections. Guests can choose between structured five or six course services, though those orders require advance notice to maintain pacing. This approach ensures every plate reflects careful timing rather than rushed production.
