On the quiet Domaine de Waillimont in Saint-Médard, just outside Bertrix, L'Épisode has grown from an ephemeral pop-up into a destination for Modern French cuisine. Chef Jordan Boreux and his team draw inspiration from the estate’s own botanical garden, where vegetables and herbs are grown with care, and from the rich larder of the Belgian and French Ardennes. The kitchen’s philosophy is rooted in seasonality and sincerity—no fuss, just flavour.
