The story
Nyde is the realisation of a dream that began years ago at the Hotelschool Ter Duinen in Koksijde. Celine Bleys, from Antwerp, and Martijn Kellens, from Limburg, met there and the spark was instant. After Celine refined her skills at restaurants including L’Air du Temps and De Pastorale, the couple had the chance to take over the kitchen where she was working – sooner than expected. In Borgloon, they opened Nyde, a place where classic French cuisine meets a playful, contemporary twist. “Taste the twist,” they say, and it’s a promise woven into every dish.
In the kitchen, Celine creates elegant, season-driven dishes with a sharp sense of flavour. She favours pure ingredients but is not afraid of unexpected combinations – a trait that keeps Martijn surprised and impressed. In the dining room, Martijn’s enthusiasm for wine is infectious; he carefully selects bottles that harmonise with each course. Their partnership is one of mutual trust and constant dialogue, ensuring that every detail – from plate to glass – fits together seamlessly.
Nyde offers two regularly changing tasting menus. The vegetarian-leaning “Van ’t Veld” highlights vegetables, while “Zee & Land” focuses on meat, fish and seafood. Both draw on seasonal terroir products, with dishes like witloof with blood orange and ajo blanco, or hamachi with yellow beet and jasmine. On Fridays and Saturdays, only the five-course option is served. During summer, guests can enjoy the outdoor terrace, surrounded by the rolling orchards of Haspengouw. This thoughtful, ingredient-led approach has earned Nyde a Michelin Recommended distinction – a fitting nod to the couple’s passion for refined, unpretentious dining.
