Chez Firmin operated as a neighborhood bistro in Braine-le-Château, occupying a converted village cheese shop with pointed whitewashed brick walls. Recognized by Le Fooding for its collaborative approach, the venue thrived on the combined efforts of four founding partners who managed the open kitchen together. Guests watched the team at work while seated along built-in banquette benches. This shared structure turned every service into a focused culinary project.
The menu shifted with the market, pairing light preparations with robust proteins. A winter sea bream ceviche appeared alongside glazed carrots finished in a sharp ponzu reduction. Slow-roasted celeriac melted on the tongue, while a hearty mash of cabbage and cured lardons grounded the plate. Guests frequently ordered the bone-in Simmental steak from the parilla grill, letting high-quality cuts speak for themselves.
This kitchen balanced tradition with modern technique across its comfort food offerings. Artisanal Bitterballekes sat beside homemade Poulycroc croquettes bound with egg yolk and sriracha.
