A Brasserie Built on Warmth and Quality

Just outside Brugge, in the village of Varsenare, Brasserie Fiston brings a spirit of genuine hospitality to the table. The name says it all: “Fiston” means son, mate, or buddy—a promise of a place where you feel at home. The atmosphere is playful, convivial, and relaxed, with an open kitchen and a bar that lets you watch the action unfold.

The People Behind the Place

Chef Pieter Seynaeve (born 1992) discovered his passion early at hotelschool Ter Duinen in Koksijde. He honed his craft through stages in Belgium and abroad, then spent three years as sous‑chef at De Karmeliet under chef Geert Van Hecke, later moving with the team to Zet’joe. That experience gave him a deep respect for technique and quality. “A perfectionist with an eye for detail and a feel for taste,” as a former colleague describes him.

Hostess Tatiana Michiels brings her own background—a degree in communication management and front‑of‑house stints at De Refter, De Karmeliet, and Zet’joe. She greets every guest with enthusiasm and a smile, and curates a thoughtful wine selection from the restaurant’s striking wine cellar.

The kitchen works with fresh, top‑quality ingredients. A fixed menu of brasserie classics forms the backbone—think dishes that are familiar, honest, and well‑executed. This is complemented by seasonal suggestions that change throughout the year, keeping the offer lively. The cooking is home‑style at heart, but the technique carries the precision Pieter learned in Michelin‑starred kitchens. It’s this balance that earned Brasserie Fiston a Michelin Recommended distinction for 2026.

The Setting

The interior is timeless: a cosy fireplace, photographs by Henk Van Cauwenberghe on the walls, and a bar that overlooks the kitchen—perfect for starting or ending the evening. When the weather allows, the sunny terrace seats up to 50. A separate private room (available for lunch and weeknight events) can host up to 30 guests. There’s ample parking, and the whole space is wheelchair accessible.
