The story
In the historical heart of Bruges, L'Aperovino is a place where wining and dining meet—a two-story sanctuary run by sommelier and hostess Julie De Mey. After moving the concept from Maldegem in 2022, she created an adventure that unfolds across two floors: a warm winebar upstairs and a fresh restaurant below. The Michelin guide has recognised L'Aperovino as Recommended, a nod to the care and personality infused into every detail.
Upstairs, the winebar invites guests to settle at a large mahogany bar or into lounge seats. With up to 100 references—world wines, natural wines, and classics—Julie hand-picks each bottle from big wineries and small farmers around the globe, from South Africa and New Zealand to California. Most are available by the glass. Alongside wine, the bar serves a selection of spirits and cocktails, including house-made limoncello. For those wanting a bite, fine cheese and charcuterie platters with bruschetta and other delicacies are served.
Downstairs, the restaurant brings traditional French cuisine to the table, spiced with fresh Mediterranean, Asian, and exotic flavours. Chef Gianni Dimitrie Weiss, whose experience includes kitchens like Blueness, Rockfort, De Mangerie, and stages at La Muse, Établissement 1880, and Pure C, leads the kitchen. His cooking balances Flemish classics with Mediterranean finesse and playful Asian influences—think bold flavours, refined sauces, and unexpected combinations. The menu changes every six weeks, following the seasons. Guests can choose à la carte or from fixed menus of four, five, or six courses, plus a lunch formula with starter and main of the day.
Wine pairing is central to the experience: six white and six red selections are chosen to complement the food and the guest’s palate. L'Aperovino is a culinary sanctuary where the two sides of Julie's world—elegant wine bar and inventive restaurant—come together in the heart of Bruges.
