The story
At LESS Eatery in Brugge, the dining room hums with a cosmopolitan energy that feels more like Tokyo or Mexico City than a medieval square. Here, in the shadow of the Concertgebouw, the kitchen delivers an Asian fusion menu built on bold, worldly flavours and a spirit of sharing.
The philosophy is simple: you choose how deep you go. Order a single dish with the Chef’s Special, pick freely from the à la carte, or surrender to the L.E.S.S. Journey — a surprise menu from first bite to dessert, composed by the chef. The lunch menu changes weekly, with dishes like bibimbap, pad thai, shakshuka, and chicken yakitori rotating through. On Saturdays, an Early Bird formula lets aftershoppers and early diners grab a Chef’s Special between 18.00 and 18.30, with the table turned by 19.30.
The space itself is flexible: a counter with a view of the open kitchen, a central guest table, and private dining for groups up to 70. Whether you are popping in after shopping, before a concert, or simply to escape the day, the vibe is warm, unhurried, and genuinely welcoming.
This approach — confident, ingredient-driven, and unpretentious — earned LESS Eatery a spot on the Michelin Recommended list. It is a restaurant that knows exactly what it is: a place for strong flavours, shared plates, and good company.
