The kitchen and its founders

Locàle operates as a relaxed Bistro in Brugge, growing directly from the reputation of Kok au Vin. Jürgen Aerts helped establish that original venue in 2003 and now manages the floor. His longtime collaborator Hendrik Dequeker runs the kitchen, bringing experience from Bury and Souvenir to this leaner format. Le Fooding recognized their approach when they listed the venue for 2026.

Shareable plates and seasonal ingredients

The menu centers on contemporary bistro cooking designed for sharing, letting diners sample bold flavor pairings across the table. Grey shrimp arrive as ultra-crispy croquettes with a creamy interior, while pollack rests in a rich crab sauce alongside tender leeks. Hay-smoked free-range chicken lands next to roasted carrots and butternut squash, and veal Milanese meets romanesco broccoli in a bright tomato base. Each plate relies on straightforward techniques that highlight the quality of regional produce.

Since opening Kok au Vin back in 2003, Jurgen Aerts has been a prominent figure on Bruges’ dining scene. Now, as the owner of this new spot, he’s hung up his apron and taken over the floor at Locàle, leaving his trusted collaborator Hendrik Dequeker (ex-Bury and Souvenir) to steer the kitchen. The stripped-back interior (light wood, black metal pedestal tables, bar stools) keeps the spotlight firmly on the fresh, inspired market cuisine, served as small plates to share (or not!). The night we went, we indulged in: an uber-creamy, ultra-crispy grey shrimp croquette; veal Milanese in a bright tomato sauce, served with romanesco broccoli, feta and from-scratch pesto; pollack lounging in a luscious crab sauce alongside tender leeks and parsley root; and finally, juicy free-range chicken, hay-smoked and paired with a vibrant orange medley of carrot and butternut squash. · Schannul
