The story

Mosh Bruges: Award-Winning Smash Burgers on Sint-Jansplein

The Pit of Joy

Mosh in Bruges delivers smash burgers crafted by BBQ veteran Tom Degroote, who partners with Pieter Vermeersch and Hendrik Dierendonck under The Mosh Lab. The kitchen operates without reservations, inviting guests to watch patties press directly from the pit where the beef rests for six to eight weeks. This extended aging builds concentration in the meat, ensuring a crust that holds firm while the center stays tender. The team channels a musical ethos into their cooking, treating every service like a live set where precision meets energy.

Bold Flavors and Dry-Aged Beef

Five burgers anchor the menu, all built on double dry-aged beef patties with distinct topping combinations. The Seoul Supreme combines homemade kimchi, double Cheddar, and Gochujang sesame mayonnaise on a potato bun for a sharp, fermented profile. The Racletattack offers a richer experience with double raclette cheese from Van Tricht, smoky bacon jam, and pickled red onion. Vegetarians can customize any burger using a Beyond Meat patty. Sides amplify the intensity, particularly the Mosh Fries, which arrive coated in miso mayonnaise and a proprietary smoked coffee salt roasted on The Bastard.

Music, Brews, and Sweet Endings

The atmosphere rejects formality, leaning into a rebellious vibe fueled by music culture and a casual queue system. Drink selections feature local craft options like the hoppy MOSH! house pale ale and the barrel-aged Dust blend, which merges saison fermentation with lambic and dark plum notes. Guests can also enjoy Angery Yogi kombucha brewed in Bruges or sparkling aperitifs like Buloo. Meals conclude with the Ice Bun, a warm toasted pastry stuffed with vanilla ice cream, caramel, and crushed nuts. This dessert provides a sticky, sweet counterpoint to the savory richness of the burgers.

To find the new smash burger hotspot from Tom Degroote and Pieter Vermeersch, just follow the clamor on Sint-Jansplein! Barbecue heavyweight Tom (of BBQ TV show Open Vuur) and his cohort Hendrik Dierendonck have landed, serving up patties that are crispy on the outside, juicy and fatty inside, aged six to eight weeks – exactly how we like them. On the menu? Five different burgers, all available as vegetarian options, including the Seoul Supreme, a double-patty, double-cheddar delight nestled in a sweet potato flour brioche bun, layered with punchy gochujang mayo and homemade kimchi – for an umami double whammy! Pair it immediately with fries dusted in smoked coffee salt and miso mayo, or the ultra-crisp coleslaw with a hint of makrut lime. These are rebellious burgers packed with punk spirit, a playful nod to the duo’s love of music. Over to you! · Euphemia Prynne
