In the heart of Bruges, chef Laurent translates his Zeebrugge origins into a refined, contemporary kitchen. At Rock-Fort, every creation is an ode to the sea – pure, precise, and surprisingly harmonious.

The kitchen works exclusively with fresh, high-quality ingredients, sourcing through short supply chains so produce travels straight from source to plate. The focus is on harmony and seasonality: comfort food raised to a gastronomic level. This approach has earned the restaurant a place in the Michelin guide, a recognition that feels natural rather than forced.

Menus that follow the seasons

Rock-Fort offers a choice of tasting menus, from three to seven courses. A recent menu begins with hamachi and green strawberry, moves through North Sea fish with asparagus, and a dish called “carbonara but different.” The seven-course version adds a chef’s signature: grilled langoustine with dashi and verveine, followed by farm chicken with XO sauce and yuzu, finishing with strawberry and elderflower.

On Saturdays and public holidays, the kitchen serves only the six- or seven-course menus. The restaurant notes allergies to shellfish and nuts – best mentioned in advance.

Natural wines and a warm setting

The wine list is a considered mix of classic and natural wines, chosen to balance the pure flavours of the seafood. The atmosphere is warm and inviting, drawing both young and old to share in the experience. Rock-Fort is open for lunch Tuesday through Friday, and for dinner Tuesday through Saturday. The restaurant is closed on Sundays and Mondays, as well as 24 and 25 December 2026, and 1 January 2027.

Right down to their logo of a fish seemingly in motion, a North Sea breeze is a-blowing at Rock-Fort. Here, the proximity to the coastline is more than geographic: Eline Snijkers (in the dining room) and Laurent Law (in the kitchen) first delighted customers at Zeebrugge, before heading back to dry land and taking over Rock-Fort in late 2023 – a tiny space that feels bigger than it is thanks to the mirrors lining the walls. Their plates elicit sighs of pleasure from the crowd, like the Irish Mór oysters served plain or with a sesame and soy barbecue sauce; the house’s signature grilled langoustines bobbing around in a dashi and lemon verbena emulsion; shellfish and wild garlic ravioli; veal sweetbreads with truffle sauce and celeriac; before the cheeses sourced from Van Tricht, and a revisited homemade Snickers bar for dessert. // Mireille Flocon
