The story
In the stone village of Falmignoul, just outside Dinant, CCnomie is a 4-star superior hotel and restaurant where the cooking is as personal as the welcome. The restaurant is the expression of a shared passion between chef David Coisman and his wife, Marie-Francoise Charlier, for the products of their terroir. Their approach is straightforward: a cuisine that is authentic, seasonal, and deeply rooted in the region.
This commitment to honest, local country cooking has earned the restaurant a Bib Gourmand from the Michelin guide, a recognition for good quality, good value cooking. It is a place where the kitchen is open and the cooking is done in full view, a gesture of transparency that matches the spirit of the food. The Gault & Millau guide has also been a consistent supporter, describing the experience as a "gourmet stop" that is a yearly favourite.
Chef Coisman’s menu is not static. It changes every four weeks, ensuring that only the best of the season finds its way to the plate. The cooking is described as both generous and precise, built on the foundations of local produce. The wine list, modern and committed, is curated with regional merchants to create a perfect harmony between the food and the glass. The result is a style the restaurant calls "bistronomic" – refined, yet without pretension, served in a warm, family setting.
Beyond the dining room, CCnomie is a full destination. The hotel offers seven uniquely decorated rooms, some with private terraces and balneotherapy baths. The property also features a seminar room for up to 24 guests, and guests can book unique experiences like helicopter or hot air balloon rides over the region's castles. But the heart of the house remains the restaurant, where the seasons dictate the rhythm and the Coisman family’s story is told through every dish.
