The story
At La Bru'sserie, chef Wout Bru invites guests to leave the Ardennes behind and embark on a global culinary journey. The restaurant, located within the Sanglier des Ardennes estate in Durbuy, offers a menu that hops from Asia to Spain, Provence, and South America through a series of small, refined plates designed for sharing. The atmosphere is described as chic and dynamic, perfectly complementing the adventurous menu.
The concept is built around exploration. Diners can choose a 3 or 5-service menu, or opt for the full Sharing menu, which presents eight dishes to be enjoyed by the table. This format encourages conversation and discovery, making each meal a shared experience. The cuisine is best described as world cuisine, where techniques and flavours from across the globe meet on a single plate.
The menu is organised by region, with each section highlighting the chef's personal favourites. From the Spanish corner, a standout is the crispy langoustine with asparagus, olive and parmesan salsa, and confit tomato. The Asian section features a hamachi with miso and yuzu vinaigrette, and Wagyu beef served on a hot stone. Provence-inspired dishes include crispy veal sweetbread with a Périgourdine sauce, foie gras, and truffle.
Chef Wout Bru’s own signature plates are a category of their own. These include a toast of smoked eel with foie gras and miso parmesan, and a lasagne of lobster with thyme butter and confit tomato. The Signature menu at €125 brings together the chef’s most emblematic creations, starting with langoustine carpaccio and caviar, and ending with a prime cut of beef.
The restaurant's quality has been recognised by the Michelin Guide, earning a Recommended distinction. This accolade fits naturally with the precise, ambitious cooking on display. La Bru'sserie is open for dinner Wednesday through Sunday, offering a setting that feels both elegant and welcoming – a place where the world comes to the table, one shared plate at a time.
