Chef Mario Elias is the latest in a long line of cooks: his great-grandfather sold ice cream from a tricycle on the North Sea coast, his great-grandmother was a chef for a baron and at a hotel in Gstaad, and his parents ran restaurants in Koksijde and Barvaux. That heritage is alive in every plate.
The kitchen focuses on modern gastronomic cuisine built around seasonal and regional produce. The chef himself prepares each dish, drawing inspiration from what the surrounding land and the season offer. Guests can watch the brigade at work through the open kitchen, a window into the precision and care behind every course.
Le Cor de Chasse holds a Michelin star, awarded in 2026 for high-quality cooking. The recognition reflects the restaurant’s commitment to refined technique and ingredient-led cooking, without unnecessary flourish.
Two tasting menus guide the meal: the Découverte menu for those wanting to explore a range of flavours, and the Prestige menu for a more luxurious journey. On Saturday evenings, only the Prestige menu is served. A well-curated wine list – available also through the on-site wine shop – is designed to complement each dish with balance and precision.
