A Michelin Star in the Heart of Durbuy

Le Grand Verre sits on Place aux Foires in Durbuy, a restaurant where art and gastronomy meet. Awarded a Michelin star in 2026 for “high quality cooking,” it is the creation of chef Wout Bru. The cuisine is Modern French with an international touch, built on fresh, seasonal ingredients and precise technique.

Chef Wout Bru’s Path

Wout Bru trained at the prestigious Ter Groene Poorte in Bruges before honing his skills abroad. He opened his first restaurants in Eygalières, in the Alpilles massif of southern France, where he earned one, then two Michelin stars. After returning to Flanders and working on culinary television programs, he was invited by Marc Coucke and Bart Maerten to take over the restaurants of Le Sanglier in Durbuy. At Le Grand Verre, Bru brings that same ambition and finesse.

An Immersive Art Setting

The dining room is filled with original works by Marcel Duchamp, the 20th-century French artist known for his “ready-made” installations, and by Jacques Charlier, whose work is inspired by Dadaism. Paintings and sculptures surround guests, creating an atmosphere that feels both refined and playful—like dining inside a private collection.

The Cuisine

The menu changes with the market. Typical starters include scallops with mandarin vinaigrette and coriander, or sea bass with artichoke, cockles, and dashi-yuzu jus. Main courses might feature partridge with green cabbage, bacon, and game jus, or a lobster lasagna. Desserts include the house’s crêpe soufflée with caramelised apple and vanilla ice cream. Every dish is prepared exclusively with fresh produce, and the kitchen adapts to what is available that day.

A Wine List for Connoisseurs

The restaurant is noted for its interesting wine list, curated by Daan De Maerteleire. Trained at hotel school, De Maerteleire worked at two-Michelin-starred Slagmolen and other starred houses before joining Le Grand Verre. His selection ranges from Spanish manzanilla to Japanese sake, with pairings available for both lunch and dinner menus.

Outdoor Dining

Weather permitting, guests can enjoy their meal on the terrace, adding a relaxed note to the formal setting. Le Grand Verre is open Thursday through Sunday, with lunch and dinner service on weekends. It is closed Monday to Wednesday.
