In the small town of Flobecq, chef Tanguy De Turck has turned a childhood dream into a celebrated reality. In 2002, he discovered a ruined castle and saw his ultimate opportunity. What began as a small tavern has grown into a restaurant that now holds a Michelin star for refined cooking, a recognition woven naturally into the fabric of the place.

The kitchen, led by Tanguy alongside executive chef Sophie, focuses on pure, striking flavours. The team’s philosophy is built on experimentation and a willingness to try and sometimes fail. The result is a cuisine that is both stimulating and precise.

The Menus

The menu changes with the seasons, respecting the rhythm of each product. Guests can choose from several paths. The "À la Carte" offers dishes like Norwegian langoustine with Ratte du Touquet potato and House of Caviar, or a plancha-cooked sea bass with bulgur, aubergine, and chorizo.

For those drawn to vegetables, the "Menu Côté Jardin" is a dedicated exploration of produce from the organic farm "de Zaailing". This menu, priced at €135, showcases surprising vegetable dishes that follow nature’s supply. A standout is the Wellington of beetroot with a potato croissant and red wine sauce.

The "Menu Vieux Château" is the chef’s signature tasting journey, available in 3, 4, or 5 courses. It might begin with a beef tartare with sea urchin cream, then move through kingfish with apple and macadamia, blue lobster with fennel and kimchi, and a quail with red cabbage and girolles. Desserts are equally considered, with a signature chocolate creation from Cédric de Taeye, and a classic Dame Blanche using 75% Vietnamese chocolate.

The Team and Atmosphere

A dedicated 16-person team runs the service, from the sommeliers Arthur and Tom to maître d’hôtel Davina and pastry chef Anaïs. Even the gardener, Gregory, plays a vital role, growing the fresh herbs that appear on the plate.

The atmosphere is one of refined simplicity, where every detail—from the intensely aromatic dishes to the carefully selected wine and non-alcoholic pairings—is attended to with sincerity. This is modern cuisine in a setting that feels both ambitious and welcoming.
