Chefs Augustin Massinon and Darius Van Hoef – friends and former colleagues from the Namur hotel school – reunited to open Primitif after years of experience in Belgian kitchens (l’Amandier, Hors Champs). Their cooking blends the precision of fine dining with the warmth of grandmotherly recipes and the casual pleasure of street food. Each plate is a composition that respects the natural flavour of the ingredient, whether it comes from the restaurant’s own garden, a nearby farmer, or the forest edge.
The menu changes every four to five weeks, following the rhythm of the seasons and the availability of local produce. In the evening, a discovery menu offers five or six services (79 € or 99 €), with optional wine, beer, or non-alcoholic pairings. At lunch, the chefs compose a shorter menu based on their daily inspiration – three or four courses that capture the moment. The exact dishes are revealed at the table, keeping an element of surprise that underscores the restaurant’s commitment to what is just and true.
Primitif earned a Michelin Recommended distinction, a recognition that aligns with its honest, ingredient-led approach.
