The story

Alard: Grounded Palestinian Cuisine in Ghent

The Kitchen and the Founder

Alard delivers straightforward Palestinian cuisine in Ghent through the hands of founder Gazan Mohammed Ishtaiwi. Every dish begins from scratch using traditional spices brought directly from the region. This dedication to grounded flavor recently secured a place on the 2026 Le Fooding list, a guide that values substance over theatrical presentation. The kitchen follows a simple rule that honors culinary heritage while feeding daily commuters.

Signature Plates and Flavors

The most requested item remains the falafel, which achieves a sharp crust while keeping the interior remarkably tender. Guests consistently pair these bites with house-made hummus and smoky muhammara to balance the meal. Marinated chicken shawarma carries bright regional spice blends that define the broader Palestinian cuisine style. A shared mixed grill rounds out the savory offerings with Palestinian kebab, lamb shish kebab, chicken shish kebab, and crispy wings.

Space and Service Rhythm

The dining room features intentionally dark walls and unpolished finishes that keep attention fixed on the food rather than the interior design. Patrons typically treat this location as a reliable pit stop before catching local trains or heading home. The operation runs efficiently for both seated meals and grab-and-go takeaway orders. Vegan selections appear regularly across the menu, ensuring plant-based diners find satisfying options alongside the meat preparations.

A little head’s up: come here for flavor, not for flair! Fear not if the dark, slightly garish decor takes you aback, because with just one bite, Gazan Mohammed Ishtaiwi’s cuisine will transport you far beyond these four walls. It’s a one-way ticket to Palestinian, with traditional dishes and spices straight from the homeland – and yes, everything on the menu is made from scratch, thank you very much! The best-selling falafels are no accident: incredibly crispy on the outside, beautifully tender within, and wouldn’t be complete without a serving of the incredibly moreish hummus and muhammara. Other standout delights include the chicken shawarma marinated in vibrant Palestinian spices, and the mixed grill (Palestinian kebab, lamb shish kebab, chicken shish kebab and wings). It’s the perfect spot for a quick, heavenly pit-stop before catching your train. · Aline Flamme
