The spirit behind the counter

Interior designer Jolijn Van den Bossche founded Amaro in Ghent to champion the art of the long evening. She positioned the Italian food bar across from her restaurant Joan, inviting guests to start their nights here and stay late. Le Fooding praised the lounge's warmth, noting how potted olive trees and striped canvas seating create a relaxed escape. The concept centers on the namesake liqueur, offering spirits ranging from bitter Amaro on the rocks to sweet Amaro cocktails.

Venetian bites and southern flavors

The menu focuses on accessible southern Italian snacks meant for grazing throughout the evening. Patrons select from Venetian cicchetti including taralli finocchio from Puglia and large pickled artichokes seasoned with fresh herbs and parmesan. Heartier options feature oven-roasted pinsa layered with butter and anchovies or filled with burrata and pistachio pesto. Spicy salame ventricina croquettes and fried formaggio bites provide additional choices for those seeking savory crunch.

Sweet finishes and seasonal events

Sweet courses emphasize bright citrus profiles and rich chocolate pairings. Lemon sorbet arrives scooped inside a hollowed Amalfi lemon, while the sgroppino blends the same citrus base with prosecco. Warm profiteroles with vanilla ice cream and dark chocolate sauce sit alongside affogatos where espresso pours over artisanal gelato. Could apero hour be the best time of day? That’s the idea that Jolijn Van den Bossche (an interior designer) wanted to promote by opening Amaro across from her restaurant Joan, to get your evening started off on the right foot – and to keep it going, long into the night! Here’s a spot that owes its name to the famous Italian liqueur, where we feel right at home (a warm lounge, banquette seating covered in striped canvas, potted olive trees inside, a well-designed bagno ). As for the food, there’s a large selection of southern Italian eats: Venetian cicchetti; salame ventricina croquettes; pinse filled with burrata and pistachio pesto… And for anyone who doesn’t want to choose, there’s a “finger food” menu that features a little bit of everything.
