An azure blue storefront, an open kitchen, a round counter, wooden benches… At this vegetarian bistro opened in 2020, Jethro Ferri and Julie Julie Van Gysel (ex-Belfort) sure do love vegetables, which they cook brilliantly with a penchant for Italy. Just take the lovely little plates we ate the day we stopped by: green cabbage and flageolet beans enthroned in a buttermilk emulsion, accompanied by a buckwheat galette filled with carrots and mimolette cheese; homemade ravioli stuffed with roasted pumpkin, pecorino, thyme and sage in tomato sauce; a tasty barley risotto with celeriac and samphire; and for dessert from Jethro (who used to work in a Tartes de Françoise workshop), a stunning combo of sunchoke, chocolate, meringue and amaretto – light enough so you’ll leave floating on a tiny cloud. // Anita Kane
