Jan Van den Bon serves seasonal cuisine in a Ghent restaurant opened alongside his wife Marie-Paule in October 1986. He treats the large backyard plot behind the building as a direct extension of the stove. Gardening runs in the family and provides a steady counterweight to kitchen heat. The vegetables harvested from that soil shape the seasonal cuisine served each day. This hands-on cultivation earned the venue two Radishes from the We’re Smart Green Guide for its transparent sourcing habits.

The dining room and art

Deep blue walls meet warm orange accents throughout the main hall. High plaster surfaces display colorful canvases by José Chapellier, whose bold pigment choices mirror the chef’s fearless flavor pairings. Marie-Paule handles floor service with a straightforward manner that keeps conversations moving naturally. Guests face the enclosed garden, so the shifting light and foliage remain visible through every course.

The cellar and wine program

Bottles rest in cooled underground vaults that hold celebrated labels alongside everyday discoveries. Staff sample each candidate wine across three separate days before approving its place on the shelves. This patient selection process supports the tasting menu without masking the ingredients. The cellar prioritizes balance over prestige.
