The story
In the historic Patershol district of Gent, Karel De Stoute is the life's work of Thomas, Lien and their dedicated team. The name references the 15th-century Duke of Burgundy, but the experience is thoroughly contemporary: refined modern French cuisine served in a warm, welcoming setting. The restaurant's ethos is simple: enjoyment that lingers — "genieten en nagenieten."
The kitchen's creative brain never rests. The menu changes continuously, built around "verdomd lekkere smaken" — damn good flavours — paired with wines that sing alongside each dish. The cooking respects classical training while embracing the freedom to break conventions in a refined way. This is modern French cooking that balances variation, renewal and surprise, the result of boundless passion and craftsmanship.
A recent menu offered a lunch at €55, or a five-course dinner at €100 (€40 for wine pairing) and six courses at €115 (€45 pairing). Dishes might include otoro tuna with foie gras, sesame and watermelon; mackerel with wasabi, kohlrabi and furikake; Irish Mor oyster with buttermilk, rhubarb and potato; lobster with fideuà, girolles and lemon; veal from Lozère with bordelaise, onion and peas; and hazelnut with popcorn and olive oil.
The restaurant's mission is to make guests feel welcome, to share the story behind each beautiful dish, and to ensure that every guest leaves thinking, "I enjoyed that so much." The atmosphere is elegant yet unpretentious, with outdoor seating available and a private room for special events. Catering and private parties are also offered.
