The story
In Merelbeke, just outside Gent, La Traverse brings a contemporary brasserie to life. The Michelin inspectors describe it as “a fine example of a contemporary brasserie,” praising both the atmospheric interior and the menu where Flemish classics sit alongside more modern preparations. The restaurant’s Classic Cuisine is Belgian-French at heart, with weekly suggestions from the chef.
At the centre of the kitchen is a Josper charcoal grill, used to prepare an excellent selection of aged meats. The menu also features sharing tapas served with aperitifs, and the chef’s “goeste” (taste) menu offers a multi-course experience. Standout dishes include the house-made dim sum with Wagyu, the Balfego tuna otoro with lime and olive oil, and the Berugi ribeye from Belgium – a rustic, authentic cut from Holstein and Jersey cows. For those who prefer a lighter bite, there is a vegetarian ravioli with ricotta, spinach, and green asparagus.
The large covered summer terrace seats 80 people, fitted with heaters and abundant greenery. The contemporary interior and stylish service invite guests to relax and enjoy the bright, honest cooking. A separate warehouse space can host up to 40 guests for private events, with the chef happy to tailor a menu for any occasion.
