The story

Lubbi Tikarson in Gent: A Grounded Brasserie by Michelin Veterans

The Kitchen and Its Creators

Lubbi Tikarson in Gent opens as a straightforward brasserie helmed by Michelin starred cooks Vilhjalmur Sigurdarson and Joke Michiel. Their inclusion in the 2026 Le Fooding guide signals a focus on grounded cooking rather than theatrical presentations. The kitchen abandons rigid timing in favor of a continuous stream of generous portions designed for lingering conversations.

The Brasserie Table

Diners encounter robust flavors built around simple techniques rather than complex presentations. The kitchen serves chicken liver focaccia layered with dried apricots and black garlic alongside plump cockles swimming in a celery jus. Steak tartare receives a briny finish through an oyster emulsion and herring roe, while the signature meatballs simmer in tomato sauce until tender. Every brasserie visit typically ends with those familiar meatballs paired with pommes Anna and a sharp lemon aioli.

Space and Atmosphere

The dining room occupies the ground floor of a modern health and technology hub in Gentbrugge, featuring granito tile floors and vintage Thonet chairs arranged around wide communal tables. A large sunlit terrace extends the seating area for casual pints or natural wine throughout the day. The venue takes its name from a character in Halldór Laxness’s novel, where the phrase phonetically echoes a French childhood term. This linguistic quirk sets a tone that favors honest conversation over formal ceremony.

Lubbi Tikarson is the brand-new playground of the Michelin-starred duo, Vilhjalmur Sigurdarson and Joke Michiel, who are also behind Souvenir. Nestled on the ground floor of WATT The Health, the new sport- and health-tech hub in Gentbrugge, this XXL canteen-style bistro effortlessly mixes large communal tables, granito tile floors, 70s Thonet chairs and comfort food that feeds both belly and soul. As for the terrace, it’s clearly been made for enjoying a casual pint of Dok Brewing or a natural wine, whatever the time of day. And the kitchen has something for every appetite – a quick lunch, an impromptu aperitif or an unhurried dinner that stretches well into the night. That evening, dinner included: focaccia with chicken liver, dried apricots and black garlic; plump cockles bobbing in a celery jus drizzled with herb oil; a slightly reserved shrimp croquette coaxed to life with a parsley oil mayo; steak tartare topped with oyster emulsion and herring roe for a surfy twist; Caesar salad modestly dusted with Parmesan; and Lubbi’s famous balletjes (meatballs) in tomato sauce, served with crispy-yet-tender pommes Anna and lemon aioli. And the cherry on top? Every summer, a rooftop version of Souvenir makes an appearance – it’s a huge crowd pleaser! // Annie Zette
