The story

Mortier Ghent: Belgian Bistro and Italian Nights with House-Roasted Coffee

A Shared Vision in Dampoort

Located in Ghent's Dampoort neighborhood, Mortier delivers a mix of Belgian bistro comfort and approachable Italian cooking. The menu relies on seasonal ingredients sourced from local producers, shifting regularly to match what is freshest. Brothers Thomas and Pieter Mortier lead the project, combining their skills to create a space that feels grounded and attentive to detail.

The Kitchen and Service Flow

Thomas works in the kitchen supported by Laura De Vlam and Sofie De Pue, preparing dishes that balance refinement with accessibility. Pieter takes charge of the dining room and manages the coffee program, where every bean is roasted in-house. This separation of duties allows the team to maintain focus on both food preparation and hospitality throughout the evening.

Seasonal Highlights and Italian Classics

Dinner features Italian selections such as fresh pasta with romanesco and pork shank osso buco, complemented by vegetarian options like a gorgonzola and kale tart. Lunchtime offers a lighter lineup of homemade pasta, sandwiches, and toast, proving simple fare can still carry weight when crafted carefully. A vegan Oats&Roll cake provides a sweet finish during snack hours.

The Room and Coffee Culture

The venue fills a converted beauty salon, preserving the building's history while establishing a lively atmosphere for locals. Patrons often gather for an apéro before dinner, enjoying the house-roasted coffee and a relaxed pace. The open layout and consistent attention to the coffee roast make the sensory experience a natural extension of the kitchen's work.

Few places provide both mouthwatering menus and warm welcomes. Here, the Mortier brothers have managed to bring you both – with Pieter (the roaster) in the dining room and Thomas (the chef) in the kitchen – who took on this challenge by transforming a former beauty salon in the Dampoort neighborhood into a lively locally-sourced joint, with backup from Laura De Vlam and Sofie De Pue. At lunchtime, there’s a simple selection of pasta, sandwiches and toast… all homemade of course. Before an Italian menu that’s more elaborate and accessible at night: gorgonzola and kale tart; pork shank osso buco or fresh pasta with romanesco… And if you’re not feeling like a full-on meal, opt instead for an apéro with friends or a cup of coffee roasted in-house with a vegan Oats&Roll cake at snack time. Always different, never disappointing! // Anika Kane
