The story
Situated along Meerseniersstraat in Gent, ’t Kanon serves small plates that balance casual comfort with careful preparation. The kitchen builds its offerings around shareable bites like oysters, creamy stracciatella with wild garlic, and chunky sole goujons. A standout is the boulet de canon, a dense croquette filled with squid ink chicken and finished with spicy chorizo oil. This straightforward approach earned the venue a spot on the Le Fooding list for 2026, recognizing a place that prioritizes honest flavors over rigid formalities.
The building once housed a clothing shop and a neighborhood pub before a complete renovation in 2021. Designers Altu preserved the original terrazzo flooring while introducing a central circular bar, dark wood paneling, and deep banquettes. Guests can claim a seat on the expansive outdoor terrace or watch the evening unfold from inside. The layout encourages lingering conversations, making it easy to move between the bustling ground floor and quieter corners while sharing casual small plates.
An upstairs dining area features a single sixteen-seat table positioned near a window overlooking the main terrace. Hosts design their own menus around specific occasions rather than following a fixed format. The wine program acts as the connecting thread, with staff guiding pairings based on personal preferences or surprise requests. This flexible structure turns milestone celebrations into extended evenings where conversation and slow sipping take precedence alongside the evening small plates.
