The story
Restaurant Vrijmoed occupies a stately townhouse on Vlaanderenstraat, in the heart of historic Gent. It is a fitting location for chef Michael Vrijmoed’s ever-evolving culinary ideas. The restaurant describes its philosophy as one where craftsmanship takes centre stage – merging the value of traditional kitchen knowledge with new insights in a creative process to produce an evolving, contemporary cuisine.
The kitchen’s modern cuisine is deeply rooted in respect for produce. The team works with organic ingredients and presents a menu that changes with the seasons. Guests can choose from lunch and dinner services, and the restaurant also offers vegetarian options, reflecting its long-standing reputation in this area. Indeed, Vrijmoed has been recognised by GaultMillau as having the best vegetarian menu in the Benelux and was voted the second best vegetable restaurant in the world. Chef Michael Vrijmoed himself was named Best Young Top Chef of Flanders by GaultMillau.
The restaurant’s consistent excellence is underscored by its two Michelin stars, awarded for “excellent cooking”. The guide’s inspectors have noted the precision and creativity on the plate, while the dining room maintains a warm, unpretentious atmosphere. An interesting wine list complements the meal, with bottles selected to enhance the delicate flavours of each course.
Vrijmoed is open for lunch from 12:00 to 13:30 and dinner from 19:00 to 21:30, closed on Saturdays, Sundays, and Mondays. The restaurant is easily accessible by tram and bus, and close to several underground car parks. For those looking to extend their stay, a selection of nearby hotels is recommended by the team.
