The story

Why Not Gastrobar in Gent: French-Belgian Small Plates by Chef Gilles Maupoux

The Kitchen and Its Creator

The Why Not gastrobar in Gent redefines casual dining through Chef Gilles Maupoux’s carefully structured kitchen. Trained at the Vatel hospitality institute and previously employed by Cirque du Soleil, he approaches every plate with grounded technique. His French-Belgian cooking balances playful textures against rich, familiar foundations.

Textures and Flavor Profiles

The menu centers on shareable plates designed to highlight contrasting ingredients. Crispy popcorn shrimp arrives alongside a sharp spicy mayo, while a delicate shallot tatin rests on caramelized mushroom duxelles. Guests frequently order the scallop ravioli swimming in lobster bisque or the slow-cooked lamb shank paired with a robust coffee reduction.

The Riverside Setting

Recognition from Le Fooding highlights a space that prioritizes comfort over formality. Five wooden tables line the banks of the Lys river, creating an intimate outdoor area shaded by seasonal greenery. Interior walls follow a strict gray and black palette, letting the food command attention.

A laid-back gastrobar with a small riverside terrace on the banks of the Lys, featuring just five outdoor tables and gray-and-black tones… But step into the kitchen, and it’s fireworks, courtesy of Champagne-born globetrotter Gilles Maupoux (from the Vatel school of hospitality management, to the Cirque du Soleil)! From explosive small plates – like crunchy popcorn shrimp with a spicy mayo dip, or the cutesy little shallot tatin with caramelized mushroom duxelles – to tempting dishes: a creamy clam chowder-waterzooï hyrid, served in a puff pastry bowl; slow-cooked lamb shank that pulls away like a charm, served with mashed potato and a strong coffee reduction; scallop ravioli and lobster bisque; and grilled bone marrow with a chorizo crumble. Top marks too for the New York-style cheesecake! // Edgar Funkel
