Zuru Zuru Ramen in Gent delivers authentic Japanese noodle bowls crafted entirely from scratch. Chef Nick Hofman trained across multiple stays in Japan before opening his dedicated production atelier. He mills organic flour into fresh pasta daily, a practice that distinguishes his kitchen among local establishments. This dedication to raw materials earned him recognition on the Le Fooding roster, which highlighted his persistent pursuit of perfect broth balance.

The Angular Counter Space

Diners pull up to a long, geometric counter that runs parallel to the stainless steel cooking line. Staff manage rolling boil pots and prep stations behind the partition. The shop operates without reservations, following the walk-in rhythm of standard Tokyo counters. Visitors frequently attend weekend sessions where guest chefs like Tadashi Yamada demonstrate regional techniques.

Umami Focus and Bold Variations

The menu centers on deeply savory soups that carry distinct fermentation profiles. A Spicy Miso version builds layers of soybean paste, chili heat, and tender braised pork belly alongside bean sprouts and sweetcorn. Happy be the chef, Nick Hofman, who never gave up his love of ramen. Honed in the kitchens of Yokohama, his art of concocting smoking-hot broths brings comfort to a slew of in-the-know regulars and Japanese enthusiasts around a large, angular counter, where its tsuru-tsuru a-gogo! During our last visit, after a few gyoza (chicken and vegetables), we tucked into: a juicy, crispy karaage chicken thigh served with a totally delish miso mayo; before choosing from a dozen options (including veggie and vegan versions), a Spicy Miso ramen in yummy umami broth, ignited by chili and topped with to-die-for chashu (braised pork belly), bean and bamboo sprouts, marinated soft-boiled egg and sweetcorn, not to mention the stars of the show, those magnificently chewy and super-soft noodles.
