The story

Les Plats Canailles de la Bleue Maison – Michelin-Recommended French Bistronomy in Habay-la-Neuve

A Blue House with a Mischievous Soul

On the Domaine des Forges du Pont d’Oye, beside the water in Habay-la-Neuve, Les Plats Canailles de la Bleue Maison occupies a house built before the Second World War. Its foundations are made of blue stone – waste rock from the 17th-century forges that once thrived here. That blue stone gives the house its name, and the restaurant’s spirit lives up to the “canaille” in its title: mischievous, warm, and unpretentious.

The kitchen turns out what the team calls “the tastiest of cuisines, made with fine, fresh and valued products.” The philosophy, written on the kitchen wall, guides a simple, fair, and particularly savoury approach to French cooking. The menu changes with the seasons, offering generous and original bistronomic dishes for dinner. Michelin, which awarded the restaurant a Recommended distinction, notes this same sincerity and quality.

From the Kitchen to the Table

The team works with products from the heart of nature: meats raised in the surrounding countryside, vegetables from local growers, and seasonal herbs from their own garden. During winter, a truffle menu celebrates a long partnership with the Thiry Family. Chocolate comes from Pierre Plas in Bastogne, and every dish is built on the idea of letting ingredients speak for themselves.

The à la carte might include a lobster preparation that has become a family tradition – whole baby lobster cooked in cream with tarragon – or a “Canaille” style lamb gigot, marinated and grilled with spices. The cooking is precise but never fussy, rooted in French technique but open to bright, contemporary accents.

Dining by the Water

The setting is as relaxed as the food. By the river, with outdoor seating in good weather, the restaurant welcomes guests for lunch and dinner. Dogs are allowed, and the estate offers electric vehicle charging stations. Vegetarian and vegan options are available on request, and the team is happy to adapt dishes.

Les Plats Canailles de la Bleue Maison is a place to feast without formality – where the blue stone walls hold stories of the past, and the plates hold the honest, adventurous cooking of the present.
