Architectural Roots and Local Vision

Brousse Table serves contemporary café cuisine inside a repurposed bank in Hasselt where raw concrete meets warm timber and structural steel. UAU architecture studio preserved the building’s industrial bones while carving out a layout that encourages lingering conversations. Owner Elien Gielen transferred her operational background from Copenhagen’s Apotek 57 to this Belgian city, converting an abandoned commercial space into a steady neighborhood anchor. Heavy stainless steel worktops and low-hung pendant lights define the main dining area without crowding the floor.

Seasonal Plates and Global Pantry

Gielen’s kitchen treats morning service and evening seating as parts of one continuous menu rather than separate offerings. Guests frequently order a kimchi buchimgae that sandwiches homemade fermented cabbage and shaved parmesan between thin rice-flour layers before reaching the table with a soy sesame dip. This café cuisine philosophy prioritizes texture contrasts over ornate plating, which keeps dishes straightforward and deeply satisfying. A former bank with a brutalist look combining concrete, wood and steel, abandoned by its former owners and transformed into a lively social hub by UAU architecture studio, where gastronomy, art and clubbing converge? It took nothing less than the wunderkid Elien Gielen (who lived life in the fast lane at Apotek 57 in Copenhagen) to invest in the place and set up her café-restaurant, Brousse. The day we went for lunch, served on one of the stainless steel tables: a kimchi buchimgae, a sort of crispy Korean pancake made with homemade kimchi, parmesan and a soy sesame dip; a classic British crumpet pimped out with fromage frais, avocado, pickled onions and a perfectly runny soft-boiled egg; a tahini sesame cookie; plus a slice of chocolate coffee cake with whipped cream to seal the deal.
