The story
The name Klaver, Dutch for clover, springs from a childhood memory: searching endlessly through a field of green for that rare four-leaf clover, a symbol of luck, love, unity, and trust. Chef Korneel Verhulst brings this same sense of hopeful discovery to his restaurant in Ieper. At Klaver, the goal is not just a meal, but a "gelukservaring" – an experience of happiness.
This philosophy is realized through a single, evolving tasting menu. You choose your length – from three to six courses – and let the kitchen guide you. The menu is a study in modern French cuisine, with dishes like Krab (crab with kohlrabi and avocado) and Smokey duck accompanied by peanut and beet, leading to a finale of white chocolate with calamansi. Wine pairings are available for each course, and carefully selected to complement the meal.
Klaver has earned a place in the Michelin guide, a recognition that speaks to the precision and harmony in Chef Verhulst's cooking. The atmosphere is one of total trust: you place your confidence in the chef, and he returns the favour with an evening of deliberate, balanced flavours.
