VEST Ieper – Modern Cuisine with Michelin Recognition in Belgium

A Fresh Wind in Ieper

VEST brings a new energy to the historic city of Ieper. Here, the day begins with soft morning light slipping over the old ramparts and ends with a dinner that echoes the flavours of the region and the season. The kitchen works without à la carte, instead offering a series of carefully composed menus built around creativity and the best of what is local and seasonal.

The restaurant’s approach has earned it a Michelin Recommended distinction, a recognition of its commitment to modern cuisine that is both inventive and grounded.

The Experience

The dining room is spacious and welcoming, suitable for a quick lunch or an intimate dinner. When the weather allows, the beautiful inner courtyard becomes a sought‑after spot – a unique green oasis in the city centre. An extensive wine list covers top references from every region, with a selected wine pairing and a non‑alcoholic arrangement also available.

VEST also operates two guest rooms in a renovated townhouse, letting guests leave the car behind and stay overnight. The location is ideal for cyclists, as it sits on the Front Route 14‑18 and the Flanders Route.

The Menus

The kitchen favours local and organic produce, including herbs grown in its own city garden. The result is a balanced, original interplay of local and less local tastes.

At lunch, a three‑course menu (€49) might begin with a crudo of scallop, broad beans and fennel, garden herbs and buttermilk, followed by glazed duck with Banyuls jus, beetroot and young turnips, and finish with rhubarb and raspberry, sabayon and red fruit ice cream. A cheese selection is available instead of dessert.

For dinner, the Kleine Wandeling (Small Walk) is a four‑course menu (€73) featuring dishes such as marinated cod with asparagus and avocado, king oyster mushroom with bouchot mussels, fennel and pangrattato, rosé veal loin with miso aubergine and confit tomato, and a dessert of raspberry, lime crème suisse and pine‑shoot ice cream. The Grote Wandeling (Grand Walk) adds a course of Breton lobster with sea aster, saffron and daikon, bisque, for €87. Both menus offer a fish alternative for the veal course.

The kitchen can adapt for vegetarians, pescatarians and certain allergies when advised in advance, though onion, egg, garlic, shallot and milk are essential to the cooking and cannot be replaced.
