Delys offers two distinct menus. At lunch, guests can choose between a 55€ or 70€ menu, both beginning with an aperitif moment and featuring beef, poultry, and citrus. The evening menu, at 90€, is a more complete affair. A typical dinner might start with an amuse-bouche of shared aperitif creations, followed by beef in gravelax with black pepper, cress, and celery. Scallops and shellfish appear next, worked with potato, then a half Breton lobster with piquillos, red curry, coconut milk, and concentrated bisque. A comté ravioli with black truffle, salsify, and concentrated onion jus precedes the main: farm poultry, with a slowly cooked supreme, foie gras, roast jus, pear, and honey-braised chicory, alongside a confit leg with shallot confit and tarragon béarnaise. The meal closes with a citrus dessert of lemon cream and fresh citrus textures, followed by a sorrel-apple sorbet with yogurt.
